Puglia's signature pasta shape — orecchiette ('little ears') — is still shaped by hand by home cooks in Bari Vecchia, a tradition passed down through generations. Join a small-group class led by a local nonna or culinary guide in a home kitchen or converted palazzo near the old town. Over 2-3 hours you'll master the rolling and pressing technique that creates orecchiette's characteristic concave shape, then cook and eat your pasta with traditional Pugliese sauces such as broccoli rabe, tomato, or ricotta forte. Classes are conducted in Italian with English translation and include wine.
