A typical 4–5 hour small-group tour visits Surquillo No. 1 Market (where Central and Maido chefs shop) for tastings of exotic fruits, dozens of chili varieties, and Andean tubers, followed by anticuchos (grilled beef heart skewers), empanadas, and a pisco sour.
