Fes is the culinary capital of Morocco, and its cuisine is the most refined in the country. Enjoy a traditional Fassi feast in a restored palace dining room: begin with a selection of salads and briouats, followed by pastilla (pigeon pie with almonds and cinnamon), then lamb tagine with prunes and sesame. Live Andalusian music accompanies the meal. The refined Fassi kitchen tradition dates back to the Andalusian refugees who settled here in the 9th century. Expect to pay 300-500 MAD per person at a palace restaurant.
