Cocido Madrileño is Madrid's signature dish — a hearty slow-cooked stew of chickpeas, vegetables, chorizo, morcilla (blood sausage), and various meats traditionally served in three vuelcos (courses): first the rich broth as soup, then chickpeas and vegetables, then the meats. The best versions require a reservation at classic establishments like La Bola (open since 1870, wood-fired clay pots), Taberna La Daniela, or Malacatín. Budget around €25–30 per person. This is a Sunday or weekday lunch tradition — it is not served for dinner.
