Shojin ryori is Japan's oldest vegan cuisine, developed by Zen Buddhist monks over 1,000 years ago and still served at Kyoto temple restaurants like Shigetsu at Tenryu-ji and Izusen near Daitoku-ji. Each meal is a precisely arranged set of seasonal vegetables, tofu, sesame, and mountain plants presented in lacquered boxes — no meat, fish, or animal products. The experience combines austere beauty with extraordinary flavour, and is one of the most distinctive culinary events in Japan.
